The Tadafusa K-range is designed for serious home cooks who require a quality Japanese blade that sharpens easily, while having a strong work hardness. The blades are forged from Shirogami #2 (white paper steel) and cladded with soft iron, which is used in many traditional Japanese knives where a sharp, pure carbon steel blade is needed.

The KD-165 is a Deba knife, which has a thick and heavy single bevel blade. It is used for cutting and filleting fish and can easily cut through fish heads and ribs given its sturdy shape. Many chefs also use them for cutting poultry or meat, given its sharp edge. While it is similar in shape to the Ajikiri fish knife, the main difference is the thickness and size of the Deba blade. The blade of this knife is polished and it has a comfortable oval shape magnolia handle for right handed use.

Please note: Since this is a carbon steel blade, it will oxidise with use. It is necessary to keep it clean by washing with soapy water and drying it well after use. Do not put it in a dishwasher. It will develop a natural patina over time and can be cleaned with a rust eraser and tsubaki oil to keep its gloss.

Tadafusa knives are ideal for serious home cooks as well as professional chefs and come in different blade types and wooden handle finishes. They have pioneered a process of carbonising wood handles to improve the antibacterial properties.
