Japanese black tea (wakocha) made from organically grown tea leaves in Wazuka, Kyoto - a region with more than 800 years of tea history. Jack Farm’s Kyoto Black Tea is produced in small quantities using naturally cultivated leaves grown without pesticides or chemical fertilisers. Instead of being steamed like sencha, the leaves are carefully withered and oxidised, following a black-tea method that highlights the natural sweetness and gentle spice of the Japanese leaf.

The result is a bright amber tea with a light body and a clean, elegant aroma. The fragrance carries notes of honey, dried apricot and fresh hay, while the taste is smooth, rounded and slightly malty. Unlike stronger black teas from India or Sri Lanka, Kyoto Black Tea is mild and low in tannin, with a delicate sweetness that lingers on the palate. It can be enjoyed plain, without milk or sugar, to appreciate its naturally soft character.

The tea is made using leaves from the Yabukita cultivar - the same variety often used for sencha green tea - showing its versatility and balance. Grown in Wazuka’s hilly terrain and processed entirely on the farm, this black tea is a fine example of Japan’s growing small-batch wakocha (Japanese black tea) movement.

A smooth and gentle black tea with a honeyed finish - ideal for late mornings or relaxed afternoons. Its subtle sweetness and clarity reflect Jack Farm’s philosophy of natural cultivation and careful, small-scale tea making.

How to prepare:

  • Use 1/2 teaspoon (approx. 2g) of tea leaves per 200ml of water
  • Water temperature: 100 °C
  • Steep for about 60 seconds
  • Re-infuse two to three times, increasing the steeping time with each brew

Cold brew

  1. Place about 10g of tea leaves into 1L of filtered water (you can use the leaves as-is, or put them in a 100% compostable tea bag for easy removal)
  2. Place the container in the fridge and wait for approximately five hours.
  3. Serve chilled for a relaxing tea experience.

Jack Farm Tea is the tea farm of Jack (Pathomthat Thongchim) and Natsuki Goto - a formidable team of two who grow, harvest, make and market their own range of teas and rice. They are part of a new generation of passionate tea farmers who are very necessary to continue tea production in rural areas with aging populations. Wazuka town is a famous tea town situated close to Ujitawara and about 20km from Nara. It has a tea history of over 800 years. The Jack Farm focus is on using organic production methods to make their main ranges of sencha, houjicha, genmaicha and Japanese black tea.
