Matcha Discovery Set
Taste four distinct matcha side-by-side and explore the differences between single-cultivar farm teas from Wazuka and classic Uji ceremonial blends. This set brings together two naturally grown matcha single cultivars (Okumidori and Oguramidori) plus two ceremonial blends from Uji (Chikureki no Mukashi and Unryū) - at a 30% saving compared with buying individually.
What is included in the Discovery Set:
1. Matcha Okumidori (Single Cultivar) - 40g (Jack Farm, Wazuka)
Stone-milled from the okumidori cultivar, grown without pesticides or chemical fertilisers. Whisks to a vivid foam with gentle sweetness, rounded umami and soft floral notes; less astringent than the standard cultivar Yabukita.
2. Matcha Oguramidori (Single Cultivar) - 40g (Jack Farm, Wazuka)
A rare, single-cultivar matcha from an indigenous Kyoto variety registered in 1954 and often used for high-grade gyokuro. Richer body and mellow, “wild-sweet” character with a lingering aftertaste.
3. Ceremonial Matcha Chikureki no Mukashi - 30g (Morihan / Kyoeiseicha, Uji)
A prestigious okonomi matcha selected by the Urasenke tea school Grand Master. It is designed for koicha (thick tea): deep umami, dense, syrup-like texture and lingering sweetness. Packed in a sealed tin; intended for practice and gatherings, it can be very special for everyday whisking.
4. Ceremonial Matcha Unryū (Cloud Dragon) - 30g (Morihan / Kyoeiseicha, Uji)
A smooth, flavourful ceremonial matcha with very little bitterness - ideal as a morning pick-me-up or enjoyed with sweets in the afternoon. It has versatile strength (for a light usucha, or a darker bowl) and is sealed in a foil bag in a silver tin. This is the WAZA stalwart matcha, sold by us since 2021.
How to prepare traditional matcha:
Matcha is finely powdered green tea, which is mixed into water, as opposed to sencha, which is steeped and served without the leaves. This means that with matcha the whole tea leaf is consumed. Matcha requires careful cultivation and preparation techniques, including shade growing, hand picking, de-stemming and de-veining of the leaf, as well as fine grinding.
- Scoop a small amount (the capacity of a bamboo scoop - 2g to 4g depending on personal preference) of matcha powder into a tea bowl or wide cup. Ensure it is wide enough to whisk the tea. To remove any clumps of powder, use a sieve to sift it.
- Pour 150ml of boiling water into a separate container to cool it down to 80°C.
- Once cooled, mix the water with the matcha and whisk vigorously, ideally using a chasen (bamboo whisk) using a zig-zag (W-shape) motion for up to 60 seconds, or until a fine froth has formed and the tea is bright green.
- Drink the matcha straight from the tea bowl or large cup.
- Matcha is wonderful when paired with something sweet - select your favourite small sweet snack as an accompaniment.
For contemporary matcha applications like lattes and smoothies, start with a paste and add heated mils or a milk-water mix.
For koicha (thick matcha), double the amount of matcha and half the water, to make a syrupy, umami-rich, matcha delicacy.

Jack Farm Tea is the tea farm of Jack (Pathomthat Thongchim) and Natsuki Goto - a formidable team of two who grow, harvest, make and market their own range of teas and rice.
