Oshibako Pressed Sushi Mould
Oshizushi literally means "pressed sushi" and is a longstanding element of Kansai’s food culture. This pressing box is made from uncoated hinoki and spruce wood and the mould creates a firm, even block of layered sushi that can be cut cleanly into portions.
It is ideal for layering toppings on sushi rice such as salmon, prawns, egg, nori or pickled vegetables.
The mould consists of a rectangular box, a loose bottom and a fitted press, with deep guide lines along the sides to allow the slicing of oshizushi before the mould is removed.
Hinoki provides the gentle aroma and antibacterial qualities prized in traditional kitchenware, while spruce adds stability and lightness.

Care Instructions
- Rinse before first use.
- After each use, wash by hand with mild soap, rinse well and dry thoroughly. Avoid soaking for long periods.
