Withered Sencha - Kanayamidori
Withered sencha green tea from Wazuka, a historic tea region outside Kyoto. The tea leaves have been cultivated without the use of pesticides or chemical fertilizers.
In the case of withered sencha, the green tea leaves are harvested and left to wither naturally in the forest next to the tea plantation. This ventilation allows a delicate, rich fragrance to develop, which is unique to withered sencha. It means it is also very lightly fermented. Green tea is rich in anti-oxidants and very healthy if consumed daily, any time of the day. It is particularly recommended as a morning or afternoon tea.
Kanayamidori is a tea cultivar first created in 1949 when Yabukita and Shizu-Inzatsu cultivars were crossed. After being grown for a number of years using the strongest descendants of each crop, it was officially registered in 1969 as a tea cultivar. Kanayamidori is unique in that it has a milky aroma and appearance. Its fragrance makes it ideally suited for a sencha.
Available as loose leaf tea (70g) in a vacuum sealed and resealable pack.

HOW TO PREPARE SENCHA:
Hot brew
- Add 1 heaped teaspoon (approximately 7g) of tea leaves into a 200ml teapot
- Pour cooled down water (70 °C) into the teapot (We recommend using water that has been filtered with Kishu binchotan, or if using tap water, let it boil for 5 minutes or more for better flavour)
- Cover the teapot and wait for 40 seconds
- Pour the tea into a tea cup and enjoy.
You can make multiple brews using the same tea leaves. Just make sure all water is removed when pouring, and add more 70 °C water when ready. Do not use boiling water for sencha. With each subsequent brew, just wait a little longer before pouring.
